Brunch food is one of my favourite type of food. Hmm maybe its the cheese and egg combination, it just makes me feel so warm and fuzzy when eating it =). Quiche is such a versatile and yummy brunch food to make, you can add anything you want in it (ham, egg, asparagus, salmon….) and just combine with egg and milk and top it off with gooey cheese and pop into oven and voila! Spinach quiche is a classic, I also added mushroom, onion, and red pepper in it to feel more healthy and add some colour, so here I present to you my veggie quiche!

 

Popeye’s quiche 

Ingredients:
1/4 cup margarine
3-4 cloves garlic, chopped finely
1 small onion, diced
2 cups fresh spinach, cooked briefly in water, drained, roughly chopped
2/3 cup sliced mushrooms
half of large red pepper, diced
1 cup shredded cheddar and mozzarella  cheese
salt and pepper to taste

4 eggs, beaten
1 cup milk
1 (9 inch) unbaked deep dish pie crust (I was being lazy and used store-bought crust ^^”)
salt and pepper to taste

Directions

  1. Preheat oven to 375 degrees F.
  2. In a medium skillet, melt margarine over medium heat. Saute garlic, red pepper, and onion until lightly browned. Stir in mushroom and cooked spinach, and 3/4 cup of cheese. Season with salt and pepper. Spoon into prepared pie crust.
  3. Whisk together egg and milk in a medium bowl. Season with salt and pepper (I also added a little bit of Italian seasoning). Pour into pie crust with the filling. Allow filling to soak up the egg mixture.
  4. Bake in preheated oven for 15 minutes. Sprinkle top with remaining cheese or more depending on how cheesy you want it. Bake for additional 20-30 minutes until the center is set. Allow 10 minutes to cool before serving. Enjoy!

  • you're right, a slice of quiche makes a perfect brunch. Most of the time I make quiche with what vegetables I have in the fridge, never the same :))
